Can I get a bronze finish on both sides of a pivot, if I hit them with a small torch? (yes, the pivot pieces are removed from the knife)

Maybe try a stainless pivot from an el cheapo before you torch the pricey knife part. I had a titanium screw I loosened from a steel threaded section yesterday with a torch and got some nice unintended colors on the screw now. Never tried stainless, but doubt it will work to your satisfaction.
 
Even if you do, it won't hold up to wear if it is exposed. Recessed screws can be colored.

Your replies are what I expected.
I've colored titanium with a torch, but had never tried that method on steel, so I thought I'd reach out first.
I see that Way Of Knife has a stainless heat anodizing service.
I buffed out the center of the pivots, to match the stonewashed blade finish.
I think they look good, so that's where they'll stay.
Should I not like the way they look once the knife is reassembled, I'll contact WOF to see what the cost would be to make the pivots bronze.
