Stainless for guards and bolsters?

What kind of stainless do you use for guards and bolsters? I would like something reasonably easy to shape and polish by hand.
 
Yes , 416 is a free machining grade , can actually be hardened to a small degree. Easier to work than a 304 or 303.
 
303 is sulferated as well and machines nearly as freely as 416. 304 and 316 are bears.
 
I use the 416, but for a long time I used the 304, I must say that it is more difficult to work but shines much better than the 416.
