"Stainless Steel" is not very descriptive. There are a multitude of alloys that can be described as "stainless steel". Only a few are reasonable choices for a knife bade. The same can be said for "non-stainless steel". Of the huge number of alloys developed, only a few are suitable for knives.

welcome electric & please feel free to ask any question anytime.as with any group of people you run into a bad apple every now & then but the great majority will go out of their way to assist you. as mentioned earlier this is a complex question but as you read the info lots of things will clear up.knives are made from many different alloys so take it slow & it wo'nt be overwhealming.
