Knife: Something decent. Don't buy the cheapest thing, don't bother with the most expensive (yet 
). Hibben's stuff seems to take abuse well and not give, and still be low-cost. I have a set of the smaller throwers that have hit rocks more than I care to mention and still haven't bent anything out of place.
Target: If you're starting with smaller knives, some cardboard or an archery target would be good. For larger knives, check out a piece of particle board at the local hardware store. They're cheap and you'll get enough out of it to see if you really want to keep throwing as a hobby.
