Recommendation? Steel and dimensions for this design

Hi. Forgive my ignorance. I'm quite new into this, I'm doing it as a hobby as I've natural inclination towards handmade stuff. I want to make this design I need size and steel recommendations to make. I have made some simple knives from spring steel and 1095, which I successfully heat treated, in the past using files and bench grinder. Now I've got more tool

Please tell me the size it should be and what steel I should use, I've 52100, 1095
