i work at a beef plant so im constantly using a knife.. and i use a steel as well.. but recently found out that there is a smooth steel that needs no sanding to remove plastic and maintain it.. is this true.. please email ramirez80631@gmail.com Thank.
 
I think he's saying he uses a knife and a butcher's steel, but there is a smooth steel (ie, without grooves) he is looking for.

Some people put their steels on a belt sander to make it more fine... not sure about the plastic part.

you're asking about a honing steel, right?

i use a mundial 12" diamond coated "steel" at my house (model #3311-12)

mundial also makes smooth polished steels (non diamond coated).

If I'm understanding this, plastic is accumulating on his smooth hone and it needs to be sanded off. The OP seems to be asking about a steel hone that doesn't need to be sanded to remove the accumulated plastic.
