Easy of sharp
Touchess, meaning no break when using as prybar

You must understand the same blade for all.

I am assuming you mean 0 = not desirable, and 10 = most desirable.

Edge holding = 8
I don't want something too brittle.

Ease of sharpening = 7
I don't mind spending a bit of time to put back a good edge.

Prybar = N/A
I don't use knives as prybars.

Rust = 2
I have lots of carbon steel blades. I also have lots of Militec-1 and Tuff Cloths. Rust is not an issue.

I kind of understand what you're trying to get at here, but you have to understand that even within the major subgroupings of stainless vs. carbon there are so many different steels with so many different characteristics that it's impossible to provide the info you're looking for without limiting the discussion to two specific steels.

For example, INFI and Carbon V are both considered carbon steels, yet INFI is far less prone to rusting than Carbon V. Likewise, AUS6A and S90V are both considered stainless steels, yet their relative performance across the board is so different as to make your head spin.

FWIW, I think you'll get a much better result if you can narrow your comparison down to two specific steels that you might have some interest in purchasing.
