Hi,

What steel is used in the Henckels jigged bone pocket folder series for the blade? Is it carbon steel or stainless ("rostfrei")? I got the information that it is "high carbon steel" but still uncertain what it means.
See http://store.knifecenter.com/pgi-ProductSpec?HK5B for reference.
Your help is greatly appreciated.

Gee, that has to be either to tough or to simple..
Anyhow, according to information from different internet stores the knife has CARBON (read non-stainless) blades!

Generally "high carbon stainless" means something like 440A. Phrases like that set off warning bells to me because if the steel was of quality it would be used in the promotion.

I believe you're right. That model appears to have carbon steel blades, where other models have some sort of 420 stainless. I looked at http://sasquatchvalley.iwarp.com/henckels.htm where some Henckels are listed. They specifically mention the steel in the stainless models, but don't list the steel on carbon steel models.

If you'd like the see a site with a large Henckels selection, and which mentions which models are carbon steel and which are stainless, try http://www.ndsproducts.com/henckels.html
