steel question

Ok, so I will go ahead and apologize for asking something that has been asked several times already.
I am thinking real hard about ordering a couple victorinox boning knives for processing deer, and hogs. I was thinking about getting a steel for touching them up while processing. I was wondering which steel you all would recommend, or if you have a better option for touch ups while using I'm open for any and all suggestions. Thanks for the help and input.
 
I do a lot of fishing and have an assortment of Vics,Dexters,Mundial and Kershaw breaking knives and boning.
In my kit I used to carry DMT stones and a honing steel.A couple of months ago I purchased Fred Rowes ERU sharpener
(No I don,t work for the company I just think it's that good)and could not be happier.No more stones or butcher steel
just the ERU. As for touch ups ten swipes and your back to full sharp (shaving sharp)Good choice on the Vics,my favorite.
 
On knife steels at low 50s RC, the steel is a good choice. The grooved kind function just like a fine file and remove steel, raise a burr, etc. The smooth ones refine the edge by plastic deformation. As a 1-2 punch, they work very well, but have a learning curve as far as angle control and consistently hitting the same angle without it slowly becoming larger and larger.

The ERU is a good unit as well, esp for this sort of work. I also did a quick run down of the cheaper carbide scrapers and how to get better results with those.

An old valve stem works well as a smooth steel (never use ridged steels). Any auto or marine engine machine shop should have a bunch lying around. I use a Lee Valley Tools burnisher at RC65 or so as a steel. It's oval, and designed to put the burr on scrapers used in fine woodworking, but works superbly as a steel.
