Steel Question

What difference does it make how a steel is cut? I notice Admiral says their S30V stock is sheared from sheet/plate. Is there another way to get it, and if so, how does it affect the steel? I don't really see what difference it makes, especially with the CPM steels, which are supposedly pretty uniform in their structure to begin with.

The mills make large plates and sheets of steel which have to be cut up for something like knives .Shearing is probably the best way.Using a torch would create problems since it would harden and maybe crack the edge.
