For regular Joe Schmoe use you will not see any difference. Its not like either will cut it any more cut than the other would cut it. They bolth have incredible edge retention. They are bolth a pain in the butt to sharpen.
Its like your asking: should I buy Green Giant green beans for dinner, or should i buy Del Monte green beans for dinner? WHO CARES! They are the same thing at apriximately the same level of quality; There is no real difference. just pick one. Flip a coin or something.

Listen, if you're in here asking about the difference between those two steels, then you're alot like me..... relatively naive about high-quality knife steel. (
I mean well here, Skunksoup). Now, with that fact concluded,
you and I will not be able to tell the difference in use.... EVEN IF we bought two Sebenzas, one in each steel, and used them both side-by-side. We might think one does better at this or that than does the other, but more likely we'd be imagining it. We would make ourselves believe it.
Now, the guys here who can tell you the difference? ... well now, they know enough and have used them enough to
actually notice the difference. But me and you and 34 skatrillion other joes? Nah.
Trust in the knifemaker. If the Sebenza you were considering had 440C steel, or ATS-34, or S30V, or wrought-iron, trust the maker's reputation knowing that any of them would be a fine choice. Picture the knifemaker with his hands behind his back. He pulls out the left hand and says "You like this one?" Then he puts his hand behind his back again, rolls the same knife into his right hand, pulls out his right hand and says "Or this one?".
