Steel suggestions

I've been making mostly kitchen knives for the last few years out of AEBL. I'm considering venturing into some other stainless. I have used s35vn and love the fact that it doesn't warp like AEBL.

Does anyone have another favorite SS for the kitchen that won't break the bank? I'm looking for better edge retention. Not too concerned about sharpenability as I sharpen for my customers. I don't really want anything that'll take for ever to handsand though. Cryo is not an issue. Lately I've been sharpening to just 600 grit and really like the results so I don't really think the super keen edge you get with AEBL is high on my priority list anymore.
