Steel type for big bowie

Hi there guys.

I'm looking into the future and I plan on having someone make me a stabby and choppy bowie knife.

something similar to the Ontario Gambler in blade profile, but with my own ideas on handle/guard etc. Blade would be between 8-10 inches

It wouldn't be used for serious chopping or splitting, more for light clearing of scrub/brush and maybe for taking small limbs of a ridgepole and possible sticking of wild game after the bow shot.

Would 01 steel be suitable for this?

I have a maker in mind be he pretty much only uses O1.
I want carbon steel. I'd also be happy with 1095 or 1080 or 1075 if that is preferred. I have a smaller knife for the finer work that requires serious sharpness, this would be more clearing and stabbing so would need to be tough.

Any of the steels mentioned should be fine.I would go with 1095 or 5160 but you should use what your bladesmith is most comfortable with or if you want something different possible look for another maker.
 
01 would be fine. I would think with a temper to maybe 55 Rc., or even a tad under.
 
I think all the steels you mentioned would be great for your knife. If you have a specific maker in mind -- and he uses mostly O-1 -- I say let him use what he knows best.
