Steel type identification

Does anyone know how one can tell if a knife blade is non-stainless high carbon steel or stainless steel (possibly with some carbon content)?

AFAIK steel is defined by carbon content, so any knife steel contains this stuff. Cobalt alloys are a different story.

Carbon steels develop a patina, which is not to be confused with rust. If you don't care about this color pattern on the blade in question, try and cut an onion with it. If it discolors, it's a non-stainless steel.
But don't ask me whether this discoloration is removable afterwards or not - I currently only own one carbon steel knife and this is both coated and always well-protected by WD-40, so I never had a patina on one of my knives.
