I have never heard of steeling a knife. What is a sharpening steel? Information on where to get one and how often to use it would be helpful.

There is another thread on steeling lower down on todays page. Where you can find out everything you want to know.
In short you steel a knife by taking a round piece of hardened steel (i.e. drill rod) and use it to realign he edge. You slide it down the edge like a honing stick and it pushes the very fine part of the edge back to center.
