Of course all of us love our 1095 and CV and O1 and D2 on knives from Great Eastern, Case, Queen, Boker etc. Except for the occassional ATS34 in Queens premium lines, and 154CM/ATS34 in Case's annual Bose line, we are limited to a few steels. As a recovering steel snob, learning that hey, I can get by with 1095 or O1 without issue, I still like super steels. I've owned a few custom slipjoints. Those blades had ATS34, 154CM, O1. The only custom slipjoint I own, an Oeser, has CPM154 blade. I know that John Lloyd uses 52100 primarily. What are the major steels used by makers? Do you offer stainless or carbon/tool? If not, why do you stick with one or the other? If you are exclusive to one steel, why?

Just for myself, if I have a knife that retails for under about a hundred bucks, I am fine with carbon or tool steel, or regular old 440C. However, once you start creeping higher in cost, I want a steel that reflects that price. Or strongly thought like that, until I started to realize all of the work that goes into getting that slipjoint you're eyeing to work flawlessly.
