How should a person store there knives for a long period of time? What should you wipe the steel down with, or just wipe with a clean cloth?

A reel cloth would work good. Or also called a gun cloth. It's a rag with silicone oil in it which leaves a light film on The object you wipe. I use it on my shotgun. I think itbis more important to store item that can rust in a dry place too with some kind of moisture absorber.

It depends on the blade steel and on your climate. Storing carbon steels in a wet climate requires a lot of protection. There are some oils made for that purpose that will work. Some people use wax for that. If you are in a fairly medium climate then oils will probably work OK. If you are storing stainless steel knives you may not need much protection. In any event you should make sure the blades are clean of food residue or anything else that might facilitate corrosion.

I use Renaissance Wax to coat the blades, plus moisture absovers in my knife drawers (just some regular ones that they sell at the supermarket).

Depends on the steel and how long they will go untouched.

If they are checked every few months, a wipe down with oil should be fine.

If longer than 6 months and a non-stainless, I'd wrap them in an oily cloth or coated in wax. If fixed, I'd not leave it in its sheath.

I just use cheap old mineral oil or coconut oil and have never had a problem. They're both food safe too, unlike some of these other options. Coconut oil is a solid at room temperature, but if you rub it between your fingertips a bit (raise the temperature some) it'll turn into a liquid. Easy to apply, gets into uneven surfaces great, and hardens almost like a wax once you stop warming it with friction. Not recommended for very warm climates though, and it will go bad if left for more than a few years. Under those conditions I wipe down with mineral oil.

Also be careful storing in leather sheaths for long periods, at least don't store them jammed down in the sheath like you would carry them around. Leather releases moisture over time, and without protective oil/wax just having carbon steels in a leather sheath that can't breathe well will cause rust problems.
