Stretch for Field Dressing and Skinning

I'm considering buying a Stretch in VG-10 for my general hunting knife, used primarily for field dressing and skinning deer. The way I see it, it has a good blade shape (drop point and a good sweep) for this, and its simple lockback construction should make it easy to clean.

So, anyone see a problem with using the Stretch for this purpose? Blade too thin maybe? I'm told it has a pretty thin grid; is chipping a concern?
