Strider Chicken Dinner

Ok not about knives but one of my favotie recipes which has been as Mick would say "Striderized". This is a favorite among my close buddies:
Please note: The original recipe calls for white wine (depicted below) instead of Guiness. After about the 5th one, I realized that Guiness gives it a darker, richer juice. Thus, Strider version of one of my favorite recipes.

2 (7 ounce/ 200 gram) skinless chicken breasts, scored
1 egg, beaten with 2 tablespoons water
1 handful dried porcini or any dried mushroom (crimini is good)
9 ounces mixed mushrooms (field, oyster, and shiitake), torn up
1/2 bottle guiness
2 medium potatoes, peeled, sliced and cooked
2 tablespoons butter
1 handful fresh thyme
2 cloves garlic, peeled and sliced
Olive oil
Sea salt and freshly ground black pepper
Preheat the oven to 425 degrees F (220 degrees C).

Mix the mushrooms, stout, potatoes, butter, thyme, garlic, olive oil, salt, and pepper together in a bowl; add the chicken.

Using wide aluminium foil, make a bag by folding 1 large (about 3 feet) piece in half. Brush all four edges with egg wash and fold the foil in half again, creating a double thick bag with a closed end. Fold the side edges over twice, creating two sealed edges; and leaving one side open. Place mixture into the aluminium foil bag, including all the liquid, making sure you don't pierce the foil. Close up the final edge, making sure the bag is tightly sealed and secure on all sides, and carefully slide it on to a roasting tray.

Place the tray on a high heat on the burners for 1 minute to get the heat going, then bake in the middle of the preheated oven for 25 minutes

Remove from the oven, place the bag on a big plate, take it to the table and break open the foil.

Also you forgot one of the steps
Drink the other 5 and 1/2 remaning Guiness, repeate as needed for anxiety.

Damn (not God's last name), Shelby, that's some recipe. Is there an executive summary version?

To give you an idea of my culinary prowess, if I'm in charge of food prep outdoors, I usually whip up my three-piece meal special: can, can opener, beans. (Just shove 'em out of the can and into your mouth with a twig). I'd do this at home too but my wife won't let me. ;)

The original recipe called for white wine but I think the guiness really works wonders.
Try it:) 20 min with the wife not around:)
 
Shelby, to clarify matters, my wife would let (in fact, encourage) me cook up your receipe at home. (I've printed out the receipe and will give it a go).

When I said "I'd do this at home but my wife won't let me," I meant she won't let me open a can of beans and eat it out of the can without a spoon or fork. ;)
 
Sounds like a very good recipe.

If I was sticking to the wine, I would opt for dill weed, rather than thyme. Thyme is better suited for the darker juices of the Guinness base.
