The 7 was my first foray into stripping. Didn't turn out perfect, but I'm content with it. The 5, 9, & 11 I stripped in the same day, and I'm really happy with all of them. I really like the contrast & the black under the micarta scales on the 9 & 11, and the stripped blades. The 5, wow, its an awesome blade to begin with, but stripped it looks like it will cut you if you stare at it too long. The 12 is the new addition. I've had it awhile, but haven't been able to post it until now. I really like it, and it was scary sharp out of the box. Just got all the others touched back up on the sharpmaker. The 7 & 11 were a little reluctant to come back to life, but I'll keep working them. Let me know what you think!

Any tips on doing this?

Many on here use Citrusstrip or another less stringent stripper, but I used Jasco. Its pretty strong stuff, if you use it do it in a well ventilated area, use gloves and keep an eye on them if they come in contact with the stripper because it will eat right through them. If you get it on your skin you will definitely know it, you will feel it burning pretty quick. I got just a tiny bit, actually a small bit of the coating got on my arm when I was scraping it off, but I could feel it burn. If you were to get a bunch of that stuff on you, well it would ruin your day that's for sure. I bought some cheap throw away foil pans to put the blades in, and a cheap grill brush to remove the coating. Brush had the scraper and the wire bristles, worked great. Be careful getting too vigorous with the bristles though, that's how I ended up getting it on me. I removed the scales and taped off under the scales with 3M Edge Lock painter's tape (its blue), then put the scales back on. I wanted to leave the coating from the back of the blade back, so I put a double layer of tape at the back of the blade, then took a utility knife and cut through the coating. I had no issues with the stripper getting under or eating away the tape, and the coating came off more or less just like I wanted it to. After letting it sit and scraping off the coating I washed the blades off and dried them good. Then I took a 3M sanding sponge that I got at Lowe's and just did a little sanding (just on the grinds of the 7 and 9) to get the look I wanted.
