Stripped and in vinegar.

Messed up with the rust, but I think it will come off if I use the knife a lot (Which will be no problem :D) Pretty fun to do.
 
I done know if that is "rust". Mustard did the same thing to my knife. I think that is just the color of mustard patina after awhile. It comes off :-)
 
Scrub it with Hot water and dish soap. That'll get the rusty looking stuff off and most of the patina should remain.
Cool pattern you got there.
 
You can also use steel wool. In traditional hot water and slow rust bluing you have to card the finish to remove the regular rust and leave the harder black oxide behind. So I would rub what you have with steel wool, wash and oil. You'll be left with what you want.
