Well,

hello guys, my name is fred and I´m a material student in France. I got some interest in knifes, which got me involved in a project to evaluate knife quality.

I´m just asing you to advise me some good books on the following subjects, also that´ll be great if your practical experience could help, my knowledge is limited to theory.

Well basically my project deals with the problem of wear resistance and sharpening of knife and lead me to these questions :
- how material properties and microstructure affect these 2 phenomenons ?
- as removal of the metal is the basic principle of sharpening, does good wear resistance necessarily imply difficult sharpening ?
- Relationship with hardness ? Does high hardness always imply high wear, then difficult sharpening of the blade ?

Fred, I'm really green about this stuff but maybe 'misconceptions' will be useful to you. As I understand, it is true that hardness (known to me as RHC) does improve wear resistance, but often at the cost of toughness. I understand that wear resistance is even more affected by the carbides formed by some of the alloying elements such as chromium - or better yet, vanadium. Lastly, I understand that heat treat and cryo-treatments have a huge effect on wear resistance. I'm sorry, the chemistry (physics?) is beyond my current level but perhaps this will spark a discussion that is helpful to you.
