Sorry, another stupid question from me. On the Edge Pro website, there's a sentence that says: "You will find on most knives you sharpen for the first time, that the bevel is not the same on both sides.... According to the dictionary, a bevel is "the angle or inclination of a line or surface that meets another at any angle but 90°." So if a bevel is simply two lines that meet, then how is it possible that the bevel is "not the same on both sides. That sentence from the Edge Pro website seems to be implying that there's two bevels. Isn't a bevel simply the angle of the two sides of the knife? How can you have two angles on an edge?
 
They are referring to the angle between the edge and the center line. Sharpening systems like the edge pro hold the blade fixed and allow you to sharpen one side at a time. If the angles on both side are different it will take a lot more work to sharpen one side.

The center line is an imaginary line going from the edge to the spine at a straight angle?

How do you ensure that both edges are the same angle? And what is the difference between the angle of the blade, and the bevel?
 
How can you have two angles on an edge?

Measured from a line which is a perpendicular bisector from the spine, the angle can be 15 on one side and 25 on the other. This is done on most knives intentionally to make the bevels have the same width to compensate for a uneven primary grind.

The angle is the same on both sides. If the knife was ground so that the edge isn't *perfectly* centered on the thickness of the knife, then one of the bevels will be wider than the other. Probably 80 - 90% of my knives fall into this category. No big deal.

The edgepro will absolutely guarantee that your angle will be consistent on both sides. If the edge is in the middle, the bevels will look the same. If not, one will be wider than the other. If you take note of this (and live long enough) you can concentrate your sharpening on one side to bring the bevel back to the middle.
