Not a dumb thread at all. It means that the joints are recessed far enough into the bolsters, so that when closed, the corner of the tang does not stick up.
Let me see if I can scrounge up some pics...
Here's the best I have already. Most of my pics aren't with the blades closed.
The Victorinox knife has sunk joints. The Case knife does not.
John did a great job explaining it. Here's a couple of additional examples. The first is a Moki Glory where you can clearly see that the tang sticks up above the bolster. The second is a John Lloyd folder with a sunken joint (top of the tang is not visible above the bolster).
