A long time ago we gave up buying anything but ground beef from the grocery store as all the solid cuts were very mediocre.

When we wanted steak, we'd go to whole foods. Very expensive.

We knew of a butcher shop the next town over, which we would stop by maybe twice a year for subs, but never got meat for some reason.

That has now changed. I got steaks that were possibly the best I've had outside a very expensive steak house. I also got 95% lean fresh ground beef (ground while you wait so it's very fresh) made burgers and gently cooked them to medium rare. WONDERFUL!

If there is a local butcher shop in your area I urge you to seek them out! :thumbup:
 
My sister buys a half cow directly from the butcher, who then cuts it up according to her instructions.

It is great beef no middleman and really cheap for the quantity and quality. Problem is you have to buy like 400 pounds at a time.

I also go to a butcher\smoke shop for my "good" meat like strip steaks, in house smoked hams and in house made bacon and sausage. It is a lot more expensive than what my sister does and I'd say the quality she gets is just as good.
 
Picked up 2 lambs in May, only way to go. Grown locally, butchered to my specs! I'm boning out a young goat Saturday.

I completely agree with frequenting the local butcher. When I want a steak, I want a good steak. My local butcher knows me by name. I usually walk in and ask them what they have that "has some age on it". They sell me some well aged meat at a good price and after grilling it, I'm in heaven. My friends call me a steak snob now but I can't eat a streak from a supermarket anymore.
 
When I buy individual steaks for grilling, like strip steaks, I go to the local butcher. The supermarkets don't hold a candle to what he can offer for steaks.

However, when I get whole pieces of beef-- like shoulder-- for slicing up steaks and making beef jerky, his stuff doesn't seem to be as good as the grocery store stuff. It's like too fatty. And by the time I get done trimming off all the fat, I have spent far more with his stuff than the supermarket's.
