Lets start this one off - the main plot = The Chase

Two of my favorites:

Atanarjuat [The Fast Runner]
Apocaplyto
 
There was the running man - which really sucked - but the short story was kind of good!
And the classic - Most Dangerous Game
 
I always thought "Surviving The Game " was pretty good.

"Open Season" wasn't bad either.

Neither will go down as great movies, though.
 
Outlaw Josey Wales - expounded on in the Westerns thread fits this Genre!
 
Chased by a bear - yeah I think that works...

Here's another - The Fugitive...
 
Last of the Mohicans seems to have a very long running scene.

The Patriot has a shorter but good chase, followed by a devastating ambush early in the film.
 
1970's: Logan's Run; Kinda hokey. (the book was better.)

1980's: Bladerunner; whole movie is Ford going after others, but the last act with Hauer turning the tables on Ford . . . still creepy after all these years.

Also, Predator. Can't leave that one out.

1990's: The Fugitive.

Grim - yeah - and the first one - Madd Max - mostly about the chase!
 
Pretty much any movie with Tommy Lee Jones in it. The Hunted, The Fugitive, U.S. Marshals (AKA The Fugitive II).

Kurt Russel movies, Duel, Breakdown... Uh... Big Trouble in Little China...

Face/Off (corny but good), Minority Report (almost lived up to the short story), Enemy of the State, Thomas Crown Affair, Ronin (OK), uh... Fled.

Madd Max is a classic.
 
If it is a car chase then these have to be in the top 10...

Dirty Mary Crazy Larry

Mary Coombs: [in car speeding towards opening drawbridge] Hey, wait a minute... why aren't we slowing down?
Larry Rayder: [laughs] She doesn't know me very well, does she, Deke?
Deke Sommers: Not likely she ever will with about one second to live.

Vanishing Point

Nude Motorcycle Rider: Is there something I can do for you?
Kowalski: Well, like what?
Nude Motorcycle Rider: Like anything you want.

The Gauntlet

Ben Shockley: Exactly. Reasonable suspicion. I can go anywhere I please if I have reasonable suspicion. Now if I have suspicion a felony's been committed, I can just walk right in here anytime I feel like it, 'cause I got this badge, I got this gun, and I got the love of Jesus right here in my pretty green eyes.
 
Pathfinder was great.
First Blood is a classic
All 3 Bourne films.Man I love the chase in #3.
