All 3 are fairly similar, they are plain carbon "non- stainless" steels, 1095 and 01 both are used widely in fix blade knives for ability to take very good edge and wear resistance, also very good toughness. Only drawback is they are not stainless, it dependes on you how much this matters. 1075 is similar to 1095 except is has less carbon content (roughly 0.95 vs. 0.75%), this reduces edge holding ability but results in increase in toughness, there is really no need for 1075 in small or medium knife in my opinion, however it would be excellent choice for machete style big knife, a big chopping knife (9 inches or longer) or axes, etc.
I think 1095 or 01 with differntial heat treatment (hard edge 59-60 RC, soft spine) would make excellent fix blade knife for all around heavy duty usage. They both are very easy to heat treat and to give differential heat treatment to, relative to other steels, they can also be forged or made from stock removal.
I hope other people more knowledge able also reply to your question.

O-1 at 57 Rc and then parkerized (manganese phospate)

for suvival purposes a good 1095 blade is probly best, 0-1 tends to chip, and 1075 is a bit weak in the edge holding area. im talking about most production knives in general. custom makers get better HT for their knives.

Isnt this related to RC and edge geometry, are you saying at like 59- 60 Rc edge with same profiles 01 will chip more then 1095? They are very close in composition, I would be surprised if most people can tell them apart in chopping and woodworking given same RC and edge profile. 1075 of course will have lower wear rsistance then 1095 or 01 but "weak" is relative- it is less prone to chipping for example at similar Rc and profile. Also there are lots of 1095 production blades, they vary in quality even in same co. like Ontario, I don't know of prod. companies using 01 or 1075.

mora uses 0-1 and the chip very bad under heavy use, but a production knife with the same edge geometery and a 1095 blade would not chip as bad. now im speaking in general terms from my own expirience with productiions steel and HT. a custom HTed 0-1 blade will be much better even with the same edge geometery.

interesting, I thought Mora use 1095 or their generic Euro equivalent, 01 is a US made steel which I didn't would be available in sweden.........?
