I noticed that some kitchen knives are made from plain stainless steel SUS304, which kind of surprised me. Is it really possible to make a knife of this material? To see an example on Amazon, search in google for "Kbk Gyutou Knife Forged SUS304". Is their advertisement about achieving 63 HRC realistic?

Whatever the core steel is on this Made in China knife, I don't see how a "powder steel" knife can be offered at $69.99.
Come to think of it, I'm not really sure if a "forged powder steel" exists.

All powdered steel is hot isostatically pressed and the forged/rolled into sheet. So forging is technically correct, though probably not what they meant. I don’t know if anyone who is getting a bar of powdered steel, then forging it into a knife.
