OK, so I had an itch to remove the coating on a few blades. I have done this before with mixed results. As anybody who has stripped INFI knows, it can look like anything under there. Sometimes it looks fine and other times you get dark patches with heavy dimples, especially around the flats like the riccaso or near the lanyard area.

Well I got lucky on these two. The CABS was Sage and the NMSFNO was Jungle Green. I had to do a little work on the blade of the NMSFNO, but the flats are nearly perfect. The CABS just needed a little light sanding and its good to go. I can further refine them at another date but they look damn good for what time I have into them.

Used KS in the spray can today to strip my Ontario marine knife, is 1095. Wiped the coating off with a paper towel, talk about easy!

I have stripped several and I wish my NMSFNO had come out like that. It had a very smooth black decab all over it. No satin at all. They came out great. I would not hesitate at all to use one for food prep either but I am not an expert on the subject.

I never worried about it. After stripping, to get to the tight spots, I scrubbed them using a toothbrush with Ajax and again with dish detergent followed with a good rinse.
Between the sanding and polishing they got scrubbed and rinsed a few more times. I would say they are ready for anything.
