Remember to look in to the Shop Talk Forum and Shop Talk Archive too. There are quite a few makers who have tried out these materials and discussed their properties quite extensively.
But just to get you salivating over the possibilities of these materials, they are both Cobalt Chromium alloys. They do not rust in the sense of a steel knife rusting. They are highly resistant to corrosion and wear. The tolerance temperature is high enough that you don't have to worry about ruining any temper if you should poke a blade made out of either material in to a fire. The stock is ground in to blades without requiring the knife maker to heat treat the knife. Problems with the materials are that they are quite a bit more expensive than standard knife steels and also harder to grind. Don't think they can be forged either.
As for difference between Stellite and Talonite, it's really hard to say in real world terms. However, Talonite is already age hardened and so is claimed to be better at holding an edge than Stellite.
