When you polish a tanto or that type of edge (convex) is the final polish include the sharpness,is there a viewable sharpend edge.

On traditional Japanese tanto and such blades, the sharpening is an integral part of the polishing process--there is no real separate "sharpening." In that event, you do not see a "sharpened zone" or bevels created by the sharpening process.

I don't know if that's what you were referring to in particular, but good luck :).

Robert is correct. Try to sand/stone your blade so that the final finish corresponds with a sharp edge. Of course, you should make a few passes on a very fine stone just to knock the burr off and make it razor sharp. BTW, this is how I was taught to finish all knives, not just tantos. The benefits are an excellent convex edge geometry and no or minimal visible secondary bevel.
