'tater soup.........

Years ago ['40s ] a friend gave me 'tater soup & It was love at first bite ! Never successful at my efforts , I gave up . Local family restaurant [ Hunters ] make a great bowl BUT 7 or 8 ounces is $3.50 .

Did a little trial & error & duplicated it on the money.


3 qt. saucepan

1 can diced white 'taters

2 cups water.

1 pkg of cheap instant mashed 'taters. Add to thicken. Don't use it all !

3 tbl spoons of butter/margarine.

1 + cups of milk

2 tbl spoons onion flakes.


Now comes the trial & error part. It is very forgiving so go for it .

Mix 'taters & water . Add butter.

Add onion flakes & set heat on boil

When you get a rolling boil stir & slowly add whatever you need to reach proper consistency. More instant mix to thicken & more milk & water to thin it .

I just stored 3 containers in the 'fridge. One'll go with my ham & swiss at tomorrows lunch . others'll go to loved ones that have never eaten 'tater soup .

Man, do I love good, hot bowl of potato soup, there is just nothing better on a cold rainy day. Here's how I make mine. (Not exactly heart healthy but it sure tastes good :D )

6 slices thick peppered bacon
2 stalks celery (diced)
1 large - or 2 med white onions (diced)
4 lbs Idaho or Russet potatoes
1 pt heavy cream
2 tbs butter
3 chicken bouillon cubes
Knorr Aromat seasoning for meat (or your favorite seasoned salt)

Fry bacon till crisp, crumble and set aside. Dice potatoes and put in a stock pot with just enough water to cover-while potatoes are coming to a boil saute onion and celery in 2-3 tbs of the left over bacon fat-add sauted onion, celery, and chicken bouillon to pot and boil until potatoes are tender. Add butter, cream, Knorr Aromat seasoning (or your favorite seasoned salt)to taste-simmer on very low heat (don't boil) for another 10-15 min...

To thicken. I puree a little of the soup with a hand blender-if you don't have a hand-held blender you can use a potato masher and just lightly mash a few of the potatoes in the soup to thicken it to a consistency of your liking... Serve with the crisp crumbled bacon on top and warm homemade bread.

I have recently reached my weight goal of under 200# . Have maintained it for several months. Will make your when it's cold outside & I can work it off.

I as well love Tater Soup...
Home made is best,, however in a pinch Knorr makes a Really good instant dry tater soup mix...
Add milk and what have you and your good to go...

milk n some water is essential but the best part for me is sliced/diced boiled eggs (you can go ape there unless you add the bacon (gotta be heart smart).
