Not sure what to think about a folding ceramic knife. Seems kinda interesting as a curiosity at $15. Can they be sharpened? Anyone have one?
 
Diamond stones will sharpen ceramics, although depending on the hardness of the blade, it may take a while. These knives are approaching the hardness of diamond stones.

The good news is that once you put an edge on a ceramic knife, it stays sharp for a long time.

The bad news is that... it's ceramic. It has similar qualities to a coffee mug, and should not be used for chopping (ever!) or dropped. The shock-resistance of these knives is improving (I've heard), but these improvements will take a while to trickle down to the fifteen dollar knife market.

I have a ceramic kitchen knife I use for cutting food that can and will react with steel. The Knife is a Big pain in the butt to sharpen I use DMT bench stones on it but the good thing is that I usaly only need to sharpen it once a year. Industrial ceramics like they use to make knife blades are some of the hardest man made substances just shy of Man made diamond. Like stated above they are not as strong as steel but they will take a little abuse Ive droped my 8 inch chefs style ceramic knife once and thought to my self well there goes that knife as it fell to my kitchen floor but to my surprise I picked it up and wiped it off and went on with my food prep, That said you deffentaly do not want to put much lateral stress on the blade like prying or digging in to materials. I would give it a look if you have the 15 dollars to spare It might turn out to be a nice EDC that will hold an edge better then any steel.
