I really don't know much about 8Cr13M0V steel, except that it is a more "budget" steel compared to VG-10, S30V, ZDP-189, and some others. What is it comparable to? What are the pros and cons of it?

(Toughness? Edge holding? Stain resistance? Ease of sharpening?)

I think it is comparable to AUS8. Sharpens very easily, my Tenacious gets shaving sharp quickly with just my travel sharpening kit.
For me the edge retention is sufficient, nothing great but it will last me through a working day. I very often carry this steel, especially when travelling. Easy to sharpen, cheap enough to loose it or have it confiscated.

i have to sharpen mine once a day. It doesnt hold near as well as s30v but for the money its a steal. no pun intended :P

I agree with Habbuk, 8cr13mov is comparable with AUS 8, 8cr edge retention is below a properly heat treated AUS 8. And 8cr is almost on par with AUS 8 in terms of rust resistance.

What are the typical uses that require a sharpening every day? Just curious. Cardboard or other abrasive tasks?

Yes. My job isn't too hard on knives, maybe cut through a few cardboard boxes, some tape, maybe a sandwich, and maybe some light branch duty, and the edge will be slightly degraded. Yet I still usually get away with not sharpening it too much.

When people tell you it needs to be sharpened every day, you have to take it with a grain of salt, even if yours would see the same exact use. Some people think it needs to be sharpened when it loses that first, hair popping edge, some like me will not mind if the work knife edge gets a little duller, but still perfectly useable.

Toughness - good
Edge holding - lackluster, but it rolls and dents before it chips
Stain resistance - decent
Ease of sharpening - piece of cake

Comparison - AUS6, 420C

Mine ranges from cutting banding, cutting burlap, cutting cardboard and tape thats mostly the basic tasks, it will do some cutting on hard rubber and plastic watering hoses as well. It takes me about 10-20 minutes on a stone to get it back to where I want my knife to be everynight but not a big deal as i usualy do it when im reading for class or watching a little tv.

Personally, I would rate it closer to AUS8 than AUS6. I have some AUS6 folders from about 15 years ago and the blade steel is not as good as the 8Cr13MoV.
