Tell me about Shun

Currently I have a few Cutco knives the we kept when my wife stopped trying to sell them when she was in college, and a hodgepodge of other random knives I picked up here and there. I'm currently looking at the Alton Angle set.

Any input, experiences, likes, dislikes, would be appreciated.
 
i bought my mom two of the classic series vg10 damascus one chefs and one santoku and she has told me bar none they were the most amazing kitchen knives she has ever owned and she has been into cooking for over 35 years.
 
I really like my Santaku Shun. Posted a review here. Cooking is something that at least one person in the household is almost guaranteed to be doing almost every day for the rest of our lifetimes. So the way I see it, these knives are worth their high tariff over the long haul. Quite an initial investment. Buying quality only hurts once. ;)
 
I don't like the looks of the handle to blade angle on the knives you have pictured in your post. I would seriously recommend you find a chef supply store in your area where you can handle those things before breaking out the plastic. I purchased my Santoku over the internet from a retailer that accepts returns for up to 30 days. Didn't need to take advantage of that, but it was available if needed. Good luck and let us know what you decide.

The company I was looking at getting these from is running a pretty good deal on that set. The angle of the handle reminds me of the "Needs Work", and people seem to like it pretty well. I'm going to go see what kind of a return policy they have, though. That's a good idea.
 
I should think that the usefulness (or lack thereof) of the angle would depend on the relative height of the work surface. I can see how the angle would benefit a lower counter top, or a taller user.

These things are like giant straight razors. I was letting my F-I-L look at them and he nicked himself right off the bat. I'm happy to see that they don't have Alton's picture on the side of the blade. I can't wait to get home and test these out. I've got a tomato that needs cutting.
 
Keep in mind that the handles on those are for right-handed people only. You have to special-order lefty models.

We should be good. Everyone that I know that will be using them are right handed. That southpaw son of mine will just have to stay out of my kitchen.:D

The have a "D" shaped handle. The belly of the "D" fits in the palm of your hand with your finger gripping the flat side. For lefties the handle would have to be turned around.

Thanks! A little Googling answered a lot of questions. I've been using the evil 22* German blades for so long. It may be time to try something different.:D
