My fiancée and I will be making our way up to Tennessee this upcoming Fall. I double checked online and I seem to be good to go, but I just want to triple check. We're driving, so I have no problem locking items in the vehicle.

I plan on having my Griptilian and SAK Cadet in my pocket daily. These should be good to go, correct?

There is a possibility I will have a small fixed blade (2-3" blade) on/in my daypack for hikes. Is there anything prohibiting that? Are there any trail specific laws?

As of last year, there are hardly any knife laws still on the books in TN. You may carry any type knife, any length, openly or concealed, state has preemption, no previous local law has any standing.

The only thing still forbidden is any knife on school property or using a switchblade in a crime, so if you're going to knock over a gas station with a knife, use a Bowie or something instead so you don't get the additional charge. ;)

That isn't to say that a property/business owner can't ask you to leave if your big azz shiv makes them nervous, but it's not unlawful to pack it.

Note that there is still a federal statute about knives of 2.5" or more in federal buildings, though, and some of those buildings are in National Parks, like the Smokies, so I'd at least consider concealing them if inside one. :)
