OK I'm turing into this complete Japanese Sword Freak and I hope it's temporary.
Here's an article I came across on the subject of blade testing. Nothing I hadn't heard as rumors, but it appears to be generally acknowledged fact.

I guess the matter-of-factness of the article is what caught my eye.
Since I make a number of kitchen knives maybe I need to develop a similar system - substituting chickens where approriate.
