Hi Folks -
At the recent gathering, I picked up JK's Tin Knife #1 in 154CM - the first one!!
John also gave be a nice little pocket sheath at a great price for the combo (Thanks John!)
I decided to do a little test today - and I took pictures to share.
I had to trim the apple tree on the back of my property, so I went out with pruning shears, a bow saw and my XD XT in case a piece of wood gave me any trouble,
In the process of trimming the tree, I came up with several green apples, and I thought that would make a nice test of the stainless qualities of the new steel John is using.
Following are pictures of the JK Tin Knife, the first with a dot!
I decided to use my new JK Chef's knife to do the comparison
I chose a medium sized green apple for the test -
I cut equally with both knives, and then set them aside without wiping them down (hard for me to do!! ) -
After 15 minutes the 01 started to show some patina, although it is hard to tell with the apple residue still on the blade.
After 30 minutes it still looked about the same -
I then took both knives to the sink and rinsed and gently rubbed each knife with a scotchbrite kitchen sponge. The Stainless did indeed stay stain free!
The 01 took a typical patina from the acids in the apple. the 154cm did not show any sign of any staining!
I think this new direction is a winner!!
I will do some more comparison tests with onion and other things when I cook more this week.
