Tests of Knife Edge Toughness

I wrote an article about the published quantitative tests for knife edge deformation and chipping. There are plenty of people out there chopping into wood, bricks, etc but what is out there in terms of a repeatable test? Can charpy impact and other toughness tests be related to edges of knives? Is there any point in doing toughness testing for knives that are designed only for cutting and not hard use?

I'm always fascinated to see how much the HT determines the properties . A given type of steel can end up with very different performance , yet we don't generally have any good way to track the HT , as consumers . So , e.g. 3V steel might be quite variable between makers or even batches . Complicated stuff !

When it comes to comparing knives to each other edge geometry is the biggest difference. Steel is probably a bigger difference then heat treatment assuming it is done reasonably. Most custom makers are making stuff in the 59-62 Rc range after all.
