Texas Survival/Outdoor Courses?

Some friends and I are looking to add some outdoor training to our resumes (it actually helps with our field of study) and we are looking for opinions of any survival/outdoor opportunities in Texas. So..if you have any suggestions, especially if you have experience with them, it would be greatly appreciated.

In Houston there is a casual adult education organization called "Leisure Learning". A number of years ago they had an outdoor survival course up in Navasota where we did the usual bushcraft things at a comune. Pretty good experience. I even got to sleep with a woman astronaut (well at least in the same barn).
