I just finished slicing up eleven pounds of london broil with a cheap Ikea knife after sharpening it up on my Spyderco Sharpmaker. It took me sixty strokes on the diamond corners, twenty on the flats, and then another twenty on the grey sticks and it just ploughed right through that beef.
That cheap knife didn't have a moment's hesitation on its way through the meat. I came here to find a knife sharpener and you guys steered me in the right direction. Excellent advice, good tools, and a job well done.
My use of cutting tools is increasing rapidly, and in the next few years I expect to upgrade to a professional sharpening system. Guess where I'm going to go to figure out the best system to use?
