The clip blade is good for many general cutting tasks, and food prep.
The Sheepsfoot is great for opening boxes, cutting things out of the newspaper, and other similar tasks.
The one linked has a leather punch. However Stockman come with a spey blade. That was originally used on the frontier for what the name implies. I use my spey blade for all sorts of random cutting tasks, and have found found the more rounded nature of the blade to be beneficial in preventing the blade from damaging unintended objects.

The stockman evolved out of the cattleman, and there are a few things that cowboys must do out in "the field" ; repair tack, spey the occasional bull, and other assorted tasks. The spey blade you will see from time to time marked with "for flesh only". the sheepsfoot is to safely cut things that are next to things you don't want to poke, and as I understand it, a great leather cutting tool. The clip blade handles all bigger jobs.
I prefer mine with a punch, as I have had to make tack repairs on the trail from time to time. realistically, I also prefer mine to have a screwdriver for the same purpose.
Cowboying tools are a great example of really purpose built tools, everything you need, and nothing else.
