These are my knives with steels that have 3% or more carbon. The only one that I can't get at the moment is MPL-1/Supracor/Fe70. That also happens to be the highest carbon content at 3.75% These particular ones are mostly unused, though I do have another S125V folder that I used while doing some roofing to cut up tar paper and shingles, and I had another Spyderco in ZDP-189 that I EDC'd for a couple years that cut a variety of stuff. Had a little trouble cutting copper wire with the nice low angle edge it had, so I tend to not lend my knives out so much anymore :p

The two fixed blades are made by Farid and are 15V and REX 121.
The AG Russell knife is stainless damascus with a Cowry-X core.
The Spyderco is a sprint carbon-fiber/ZDP-189 Walker.
The black knife is a Fantoni HB-02 in S125V.

Here's a link to Gator97's site with a graph of the 3%+ steels. It only displays four at a time, but the compositions are below the graph.

I still haven't had the money to do anything with my 15V sheet that's here looking at me, along with a few other things. I do want to try it out eventually at full hardness. That is rarefied air there Heardheart. No question.

Farid is afraid of no steel! :) That Rex 121 gave him and his equipment a great workout.

I was going to buy one of those mules but I needed to pay emergency vet bills instead. I guess it was a good choice as Finn the mastiff is still sitting on the floor next to me.

That Walker in ZDP is a mean little matter separator. Probably the one I would use the most.

How improved is Cowry-X over ZDP? I know it just has a hair of V and 1% of Molybdenum on top on the standard ZDP formula. MPL-1, however, seems like a monster compared to even S125V. MPL-1 has 1/3rd the notch strength test numbers of S90V? Is this steel a chipping machine? Is it tougher than ZDP?
