I highly recommend the Edgepro Professional model knife sharpener. It is the only knife sharpener that I use in my commerical kitchen. I do not even have traditional Norton three stone systems in my kitchen.
I found it necessary to do training sessions for all my employees to famliarize them with the system, and I have found that they love the system after they are familar with it. I have found Edgepro's customer service to be excellent.
I recommend that any person interested in maintaining sharp knives invest in the Edgepro Professional model knife sharpener. It is more durable than the Apex model, and it holds up better in the commerical kitchen. The Professional model is made of aluminium, and it is built much stronger than the Apex model that is made out of plastic.I do not recommend the Apex model for work in the hot kitchen because I am not sure that it is durable enough to stand up to the rigors of a professional kitchen. The Apex model would be great, if a person wanted to use it to keep knives sharp at home.
