As a metallurgist I've often used a microscope in my metal research but this is the first time I see a microscope used in bread making ! After making bread for about 45 years !
Much of the 'Paleo Diet 'is nonsense . Since they didn't have super markets in those days you ate what you could find locally ,so each area had a different diet.
So now we have the Bread Age ! and be thankful .:D
 
I hope my ancient ancestors ate Honey Bunches of Oats with Pecans and Maple Brown Sugar.. I couldn't give that stuff up if I tried..

Really interesting read, though. There's still a lot we don't know about early man. Every little bit helps pull the puzzle closer to view.

I don't know from palo diet or bread age. Bu they did finally analyze what Otzi had as a last meal; Meat! What man survived on for uncounted thousands of years to evolve. Yeah, bread is nice to have, hard to make a roast beef sandwich without it.

All these diets are getting out of hand. Know why our ancestors were slim - plenty of exercise in terms of work & day to day living, and not being able to eat as much as they want. Starting to get overweight - burn more calories than you eat. The church I (occasionally) attend had a visiting children's choir from Haiti sing today. Of the 15-16 children singing only one could not be described as slim, even them she was only a little chubby. Of the children in our youth group roughly 1/3rd could be described as overweight, with some being obese. Now I'm not saying I want my boys to live in conditions like those kids from Haiti, but I also don't let them forage in chips & sodas - I don't even keep soda in our fridge. They also participate in sports (Cross country & Track) at school.

Sorry for the rant, but I work at a diagnostic clinic and not a day goes by I don't see an overweight kid brought in for labs to determine if they have diabetes.

Many people today are overweight, including myself. Lots of factors involved. Humans are omnivores. In eras past, people ate what they could get, whether it being from hunting, gathering, or later farming for grains and domesticated animals. Not likely that too many Paleoithic era peoples were too fat, whether it was meat, fruit or grain they were eating. Finding water and food had to have been the number one priority.
 
In Hawaii , the natives have a different digestive system . Traditionally they had no concentrated carbs . That system now , fed concentrated carbs [typical American diet ] will quickly pile on weight ! ! Put back on their traditional diet the pounds com off !
