the definition of a sharp knife...

Is Different among the "great unwashed" ha ha I joke a little.
Coupla months ago, I was at my brother's house for a visit. I was checking out his well-used Spyderco Endura. And he doesnt own a real knife sharpener at all and he has owned this knife for 10 years and he uses it often. It's been a great knife and he has unintentionally beat the heck out of it. Other knives wouldve failed long ago.
This poor blade wouldn't cut skin with good velocity.....so I sez, brother, I can sharpen this up for you if you need it....
and he sez, It doesn't need to be sharpened...........

Most non-knife folks have never experienced a sharp knife. I tend to bring my sharpening stuff with me and I'll just grab their stuff. They're always shocked at the end.
 
With my sharpmaker I say if it will easily shave hair that I have a usable sharp knife. In the future I want to invest in a wicked edge and get things scary hair splitting sharp. Not that I need something that sharp I just want to be able to brag lol.
 
Before I retired I used to sharpen the kitchen knives of several of my co-workers just before Thanksgiving. I'd also sharpen their pocket knives whenever they asked. Several of them cut themselves "testing" the freshly sharpened knives by runing their thumb along (yes, that's right, along, not across) the blades. After this happened a few times, I started showing them proper ways to test for sharpness. I showed several of them how to keep their knives sharp with a butcher's steel, but none of them ever got one for themselves. I don't know how they used those knives in their kitchens. On some of them, the square back-of-the-blade was sharper than the "cutting edge."

If it is sharp enough for him to use it for whatever he uses it for in his daily life then isnt it fine? From personal experience (back when i had a bunch of junk and just a pull through sharpener before i even knew what a spyderco or benchmade was) the knife can be pretty dull and still get the job done. Even though having it shaving sharp makes it alot easier, I probably dont really know what a "sharp" knife is to you guys. If i can get it sharp enough to cut computer paper thats sharp to me, some of you guys can get a mirror polish on your edges, blows my mind. Best i can do is just get it hair shaving sharp between my sharpmaker and fine benchstone.
 
Yeah, computer paper, hair popping, and tomato skin cutting sharp is good enough for me most of the time.

i dont think i could get it sharper then that, maybe its above what i haves capability or i could just be making mistakes that prevent anything more.

Yeah, there are guys on here that can get them hair splitting sharp, but there's a lot to it.
