Did a search for "granton" and came up with varying opinions. I'd like to see a post just on this subject.

For those not familiar another name would be a fluted edge and it is typically found on a kitchen knife such as a santoku. It is not serrated, the "flutes" are on the side of the knife, not the edge.

It is supposed to reduce the tendency for foods to stick to the edge and make hand sharpening easier. Regarding sharpening, Levine believes it is more of a nuisance.

Those of you with hands on experience using and/or sharpening the Granton edge I'd like to hear your opinion . . .

If it effects sharpening either way then something is wrong. I have not used them, have meant to, you can find Fred's comments on them he has used them alongside knives without them.

I have mostly seen Granton-type (Granton is a Brittish knife manufacturing company) edges on slicing knives used for cutting roast beef at buffet restaurants. I have a couple of those and they don't really work for me. They don't seem to release the meat as well as I had hoped. They may help release crisp vegetables, but Granton-type edges are thicker than regular edges. The blades have to be thicker near the edge to allow room for the scallops. You would think that holes through the blade would work, but I haven't even had luck with those.

I was looking at a scalloped Victorinox Santoku at the store the other day. I haven't seen that model before, must be new for them, it was one of their fibrox-handled knives. The scallops looked thinner and longer than what I've usually seen, and at a glance they didn't seem to be as close to the edge as on some knives. The knife actually looked very nice aesthetically and had functional promise. I'm really tempted to buy one and use it alongside with my Felix for comparisons. I have not had negative experience with granton edge -type knives before, but have never thought of them as a necessity.

I've used a fair number of Granton knives and like them. From what others have said if your going to mess about with something like a real Granton edge get a Granton knife.
