So I love stag knives. No if, ands, or buts about it. I don't have any, but I love the ones I do have. From left to right Henckels Whittler, Voss Cut Co 4 inch stockman, Jim Bowie 3.5 inch stockman, Hen and Rooster 4 inch stockman, and Henckels 4 inch stockman. Can anyone guess what blade configuration I like best?

I didn't like stag at first, but now it's my favorite handle material. Here are the only stag knives that I own.

Sorry about that. I was referring to the Stockman. Outstanding! Is this quality common in the Henckels? Thanks for sharing.

From what I have seen the older Henckels and Hen and Roosters have had great stag. The stag on my Henckels stockman is my favorite.

Kamagong you have some nice knives there. I love your turkey carving set. What a set of handles those would make on my knives lol.

Yes, all your stag is lovely, but I agree on the Henckels stockman-- extra primo!

Henckels (like most early Sheffield makers) was known for using bark stag all the way to the edge of the scales back in the day. Pre-World War I seems to be the best, but there are lots of later knives with nice stag as well.

Here are a few Henckels:

From what I have seen, the older Henckels consistantly have the most beautiful stag. Hard to beat.

I am beginning to really like stag.

I was just at SMKW this past weekend, and they have several old displays of incredible stag hafted knives from Friedrich Herder, of Solingen, Germany. They were very similar to the Sheffield knives posted here.

I've seen those Friedrich Herder displays many times and have tried to get some decent photos of them to post here but never have gotten any decent images. Wonderful knives and piece of history.

Stag is awesome. I just love it. Here's my latest stag acquisition, a Mike Tison Dogleg.
