What is your "One that got away" knife? For me it was the Dozier folding Nessmuk in damascus and mastadon ivory.

I was contemplating purchasing it, but I have never paid anywhere near 1 K for a knife. Well, I thought too long and, alas she was gone!!! She would have been my ultimate safe queen!!!

Wow what a beauty!

There are soo many knives on this list, tears are streaming down my cheeks.

Recently a hinderer 3.5' slicer grind.
 
Back when Dave Shirley was heading Northwoods he had this stash of gnarly sambar. I snagged a few knives that he mounted the sambar on...but I should have gotten more.

I doubt we will be seeing much sambar ever...let alone real nice sambar. Maybe the situation has improved...I dunno.

I can't really think of any that were for sale and got away that I was bummed about later, but I had a Sheffield and Sons Bushcrafter that was a gift from my cousin, hardly got to use it when I lost it doing some pretty stupid stuff, that's about my biggest regret regarding knives
 
I don't get too broken up over most things but Oleg Krymlin made an ebony handled Puuko a while back that I'm still kicking myself for missing.
 
I wish there was just one! Off the top of my head: Spyderco Dodo (plain edge), Spyderco Ronin, Spyderco Endura G-10, Benchmade Gravitator (plain edge) and loads more.

I've managed to cross out a few from my list over the years, almost invariably at great expense. A collector once told me "You only regret the knives you didn't buy" and he was absolutely right. Nowadays, when a knife/gun/book I want turns up and I can afford it without losing my house, I buy it.
 
A Protech Brend Auto Prototype that was priced perfectly, but I literally was $50 from being able to buy it before my next paycheck. No one had jumped on it yet and hindsight being 20/20 I should have asked if the seller would have taken half down and the other half in a week, but I felt bad about asking. It was withdrawn by seller and by the time I had the funds I contacted him and it was gone *sigh* :(
 
Wish I'd have pulled the trigger on this snakeskin MOAB when I had the chance.

I ended up with one anyhow but I'm greedy and want them all. :D
