Back from moose hunting over the weekend, I had no luck but my cousin bagged a nice cow.

While he was skinning it, I passed over my Camillus Talon 154cm, After a few minutes he told me it was "almost too sharp"!!!

He's fairly experienced with skinning and quartering game (unlike myself), but until he got used to the knife, he had several inadvertant punctures in the hide, and the thin membrane covering the muscles.
 
Whenever I sharpen knives for people, I say, "Now, remember your knives are sharp. Do you know what that means?"

Quite a few butchers I know don't like their knives overly sharp. Too keen and the knife runs away with itself and it goes places where you don't want it to go. They prefer to drive the knife which gives them more control. DMT red medium is about what they like with not too keen/angled edge profile.

However, I like my knives scarey sharp.
